“It’s more expensive and we’re taking the hit at the moment, but it’s worth it. It helps me sleep at night! I think you can offset it and then advertise what you’re doing. People are more aware of it. So, if they see prices creep up, even if it’s just 10p, I don’t think that’s a lot to pay to help the environment and I think people are quite happy to pay it.
“It’s part of my ethos, we’ve always been environmentally aware, we use natural organic local foods so there’s a lot less mileage. People realise where our food comes from and they’re quite happy to pay for it. We need to look after our environment. One of our best natural resources is the sea and it’s a shame that our junk is floating around in it and poisoning our fish … and that eventually comes back to us as well.”
